CHICKEN BROTH - BIRTHDAY BROTH

Chicken broth is fantastic for keeping the colds and flu away, so today I made my chicken broth, with the chicken brine. In the large pot of chicken brine I included the following.

A couple of small roasted parsnips.

Four small potatoes cut small.

Celery sticks from the garden.


A large leek.

Handful of pearl barley.

Handful of black mustard seeds.

Handful of cumin seeds.

Tomato puree to taste.

Black pepper and Rock Salt to taste.

Paprika, a teaspoonful.

Some dried basil.

The breast from the chicken, and the chicken from the bones.

Towards the end of cooking, included handfuls of kale.

Important nutrients for health in my lovely birthday broth!

Next on the menu is some date and almond pudding!
