However, some of those foods are high in oxalates and if a person has a ligament or tendon issue the last thing a person should be consuming is food high in oxalates. Oxalates bind to calcium and iron, and crystal oxalates are very sharp indeed. Oxalates also cause inflammation. I highly recommend a book by Sally K Norton on oxalates, "Toxic Superfoods".
