LEMON-HONEY CHICKEN

So what's been on the menu this week, I boiled some lemon skins (from 2 squeezed lemons) sliced small, to make the most of the lemon juice and zest. Put the lemon juice in the fridge overnight, and the next day marinated the chicken breasts cut into small pieces, in the lemon juice with four sliced cloves of garlic.

The two chicken breasts in lemon juice were then given a couple of large spoonfuls of honey, and some ginger, (as much as you like) stirring the mixture to make sure that the chicken was encased with the honey, garlic, ginger, and lemon juice. Then the chicken breasts were covered in sesame seeds, and sliced leek and slowly cooked in the oven. Delicious, quick and easy to digest.


You could also include bamboo shoots in this recipe as they are also important for nutrition. The two small breasts and other ingredients was enough for two meals. Although the second time I also included a sliced boiled egg.

Last night I had fish and chips, just had to have a large cod fish and chips. First time I have had chips since 2018 began.  I've been on my best behaviour. Be intuitive with your food choices and listen to what your body is asking for each day.
