Lemon Chicken and Ginger

I'm having some chicken today, cooked in coconut oil, fresh lemon juice and fresh ginger. My potatoes were prepared first. Par-boiled in a teaspoon of turmeric in water, prior to saute in butter and a little olive oil with onions. You can keep the potato and turmeric water afterwards to make soup.

With the chicken we are going to have some left over vegetarian meat balls for the stuffing balls, some small yorkshire puds, with vegetables. Carrots, peas, sweet corn, and spinach. We don't eat chicken very often, sometimes once a week, sometimes once every ten to 14 days. Lemon chicken in fresh ginger would also be great with rice, and or with a salad. Especially for older people, little and often is recommended. If you don't eat chicken, then you could supplement it with what you eat to replace it. The fact is that the brain requires animal fats, although you can get that from butter too, and that is why I saute my saute potatoes in butter. It also gives the potatoes a lovely flavour. 

The coconut oil has been divinely guided today, so coconut oil is on the menu. I cooked the chicken for a bit in the pan that the potatoes were cooked in, prior to putting the marinade on. The great thing with this dish is that I can sit down in between the cooking, I don't have to stand up over it all of the time. 

After both sides of the chicken had been cooked, I then put some more marinade on both sides, and after that included some water to keep the pan in some fluid. Also included, small slices of the skin of the lemon that had been squeezed for extra zest. While that is cooking slowly, can get the veg ready. 

If I have room for afters, then it will be some fresh fruit salad and this weekend I have a great choice to choose from. Banana, cherries, lemons, nectarines. orange, plums, strawberries. Mango and passion fruit yoghurt.
