CELERY and SWEET POT SOUP

What's for dinner, this evening I've had half of a large avocado with Lotus Feet honey dressing. That includes some palm oil, raw honey, balsamic vinegar and chopped garlic. Delicious. Then I cooked some celery and sweet potato soup. It shall be followed with some carrot and almond latkes and fresh salad. 

It feels really good for this mystic to be eating again, with some fresh food in the fridge.



Celery soup is excellent for the adrenals, and the adrenals impact on the kidneys, so celery is very important to aid detoxification. I like it raw, with cream cheese, as well as, in different soups.

Last night, I cooked some sweet potatoes in their jackets. Just put them in the oven. The very large one I left for today to put in the soup.

In today's soup, we have the following::

The inside of a sweet potato scooped out, either chopped or mashed.
A handful of grated carrot.
2 large celery sticks, cut thinly across.
1 tablespoon of pearl barley.
1 teaspoon of tomato puree.
Black pepper and pink salt to taste.
Covered with enough water to cover it all.
Add more water as you go along, make sure there is plenty of fluid.

If you find it a little too sweet for your taste, then add a little balsamic vinegar or soya sauce.

It makes plenty for two. If you live alone, you could put some in the freezer for another day.

It is a delicious soup, and very healthy for you.
