My coconut oil cous cous for lunch.
Put your cous cous in a bowl to swell in boiled water.
A large clove of garlic, as much sliced ginger as you like, cooked in the pan with two large tablespoons of coconut oil. Then include as much onion as you like, (I had some frozen onions in the freezer for when I don't have fresh) when cooked and your cous cous is ready, put your cous cous in the pan and stir well with its ingredients.
Then include some sultanas, and sliced dried apricots. Include some soya sauce, black pepper, and paprika. Lovely served with roasted, saute or BBQ'd chicken. You could also have some yoghurt, mint and cucumber salad with it, and or a green salad.
