Last night it was sliced baby beetroot and onion ring soya pancake.
Make your pancake mix enough for one thick one, add a tablespoon of soya sauce, fry in olive oil. When it is browning, flip it over, and when it is nearly cooked, add your sliced beetroot and onion rings. I sprinkled a little salt on mine when it was finished. The healthy pancake was served with some hot chili sauce. Delicious, economic, healthy and tasty meal for one.
